MEDITERRANEAN CUISINE

Visiting Grasse, it is not just the beautiful perfume essences that waft past your nose. Served mainly locally, "le Fougassette" is a wonderful yeast cake with an orange flavour. The Provençal cuisine itself is simple and uses mostly local products. Characteristic are the many aromatic herbs, tomatoes, peppers, aubergines and the generous use of garlic and olive oil. Typical dishes you should not miss are “bouillabaisse”, which is eaten with spicy garlic mayonnaise, “soup de poisson”, “daube provençale” (a beef stew) and aioli. White nougat from Montelimar or candied fruits from Apt or “Calisson d’Aix” (an almond confection with candied melon and orange) show off confectionery at its best.
